Wow I've a pining for some very good griddle roasted chicken, the melt in your mouth variety with some fresh home made salsa slathered right on top.
Just appears that we never have some time in the relaxed days of summer to do everything. You know, you've got to mow the grass, weed the garden and if you are fortunate crop a bounty of fresh goods from your own small van farm. Now you predict me to cook dinner too? It is time to tell you my secret and go on the hunt for my fave 'yard bird', Capt'n Salsa's Griddle Roasted Yard Bird, actually. Yes. Delightful golden brown damp and tender some of the finest melt in your mouth griddle roasted chicken you may ever eat. Now, don't let the hunting phrase concern you. The limits of hunting chicken for me is searching for a giant plump three to four pounder at the local corner store or beef market. I usually bag my limit of 2 as it is just as simple to cook two simultaneously to promise some left-overs 'Come on, Capt'n Salsa, give up thrashing round the bushes and just give us the recipe!' Oh, O.K . Capt'n Salsa's Griddle Roasted Yard bird is so straightforward you may likely giggle.
Naturally it goes with out pronouncing you want to wash the chicken in cold water before you cook it. All you will likely need is a large amount of Lemon Pepper Seasoning. Mix up a solution of one part plant oil with four parts of Apple Cider Vinegar, remember that is the brown vinegar, together in a squirt bottle, an empty syrup bottle will do very nicely. Now we're going to cook our griddled chicken entire on your fave charcoal or two burner gas griddle using the 'indirect heat' technique. Your griddle requires a lid which will close, too. Much of the time now I just use the gas grill, heating the grill with both burners, then turn one of them absolutely off, yes, off and the other burner turn it all of the way down to low. I am getting a little ahead of myself.
Heat your selection of griddles. Then wash and clean the birds. Now hose down the chicken with the mix of oil and vinegar using the squirt bottle and splatter a generous portion of Lemon Pepper Seasoning all over the chicken.
Remember the body cavity. Place the chicken fillet side up on the grill away from the heat source, above the burner that is turned off, indirect heat strategy remember. Squirt a little more oil and vinegar into the hole of the chicken till it 'overflows. ' Now close the lid. You need a medium low heat level. The target is to take at least two to two hours to prepare the chicken, nice and slow. Don't fret after 2 times you'll have it 'down to a science' and know what works best. When you have your chicken on the griddle go mow the grass or work in your garden for the subsequent two to two hours without even taking a look at the birds - well, if you insist strongly upon taking care of roughly an hour, you can raise the lid and give the birds a good squirt of the oil and vinegar solutionNow, close that lid and get back to work.
The process of consuming the chicken is performed by grabbing the end of one of the legs with a paper hand towel, careful it'll be hot, and carefully twist the leg bone in a circle. If the leg bone simply breaks free at the joint, the chicken is done - an attractive golden brown, damp and tender each time. Straightforward huh? Place the chicken on the griddle, mow the grass and when you're finished with your yard you have Capt'n Salsa's Griddle Roasted Chicken make that Yard Bird! Serve it up with one of your favourite home made salsa recipes. Roasted Corn Salsa or mouth watering Salsa de Tomatillos Savoury ! Wrap it all up in a warm tortilla, complete along with your favourite thirst quenching drink and you may marvel about how great your yard looks. Imagine.
Cropping the grass and cooking dinner all at the same time - Enjoy!
